Thanksgiving is over but now the question is what to do with all of the leftovers? Try a tasty and healthy recipe below to add some life to your extra turkey.
Turkey Roll-ups with Blueberry Salsa
- ½ cup reduced-fat mayonnaise
- 2 tsp curry powder
- 1 pint blueberries
- 1 jalapeno pepper, seeded and chopped
- 1 kiwifruit, peeled and diced
- juice of 1 lime
- ¼ red onion, finely chopped
- ½ tsp sea salt
- 8 butter lettuce leaves
- 8 slices of turkey
Combine reduced-fat mayonnaise and curry powder in a bowl. Place blueberries; jalapeno pepper, seeded and chopped; kiwifruit, peeled and diced; juice of lime; red onion, finely chopped; and sea salt in a bowl; stir to combine.
Top each of 8 butter lettuce leaves with 1 tbsp may mixture, 1 slice turkey and 1 tbsp plus 1 & 1/2 tsp blueberry salsa.
Roll up to serve.
